Damper Bread Recipe

This is a great simple camp bread that can be cooked on a dry frying pan or wrapped around a stick.

Ingredients

  • 1 fist full of self-raising flour (roughly 100-120g)
  • ½ tsp sugar
  • pinch salt
  • 1 tsp dried milk powder – optional
  • 1 tsp butter
  • A few tbsp of milk
    or water (if you used milk powder)
    or a banana for a deliciously different twist.

Method

  1. Mix the dry ingredients in a bowl
  2. Rub the butter through the flour mix until it looks like breadcrumbs
  3. Mix in the liquid a little at a time. It is very easy to put too much liquid in and very hard to rescue if you do! Put in the first tablespoon and mix, it in. add more. Once you have ¾ of the flour as dough and ¼ still as powder – start to add in much smaller fractions e.g. ½ teaspoon each time.
  4. Either
    Roll into a snake shape and wind it around a clean, pealed, dryish stick. At each end of the snake, pinch the dough on to itself. Hold it over the embers a fire for 20ish minutes, rotating often. Working out a system where you can rest your cooking stick on a log and hold the bread in exactly the right position is worth the effort! Holding it in flames will burn the outside before the inside is cooked

    Form it in to a 1cm thick circle and dry fry it on a pan, or dutch oven lid, over embers 10-15 minutes per side
    Knock the dough to see if it is cooked it will sound hollow.
